Solar Honey Swirl: a new State Fair tradition featuring honey from Minnesota’s pollinator-friendly solar arrays. Recently featured by Martha Stewart and National Geographic, we are happy to feature the nation’s first harvest of Solar Honey in an ice cream—perfect for the Minnesota State Fair!

It’s not a new floral varietal of honey—it’s a new process, identifying the fact that the honey has been produced in or adjacent to a solar array that is covered with high-quality pollinator habitat.

Solar Honey Swirl was created in partnership with the Minnesota Honey Producers Association and Bolton Bees.

In 2016, Fresh Energy helped shape Minnesota’s statewide standard for pollinator friendly solar. Now, solar arrays across Minnesota can produce local clean energy, support pollinators and wildlife, AND produce local honey!
